Spinach, mushroom, and feta stuffed flounder fillets - a delicious weeknight dinner choice.
Ingredients:
  • nonstick cooking spray
  • 8 large fresh mushrooms, sliced
  • 8 ounces spinach, rinsed and chopped
  • 1 tablespoon crumbled feta cheese
  • 4 (4 ounce) fillets flounder
  • 2 tablespoons water
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat an 8-inch baking dish with nonstick spray.
  • Heat a medium skillet sprayed with nonstick spray over medium heat. Sauté mushrooms until juices evaporate, about 5 minutes. Add spinach, cook until wilted, about 2 minutes. Drain excess liquid, then stir in feta cheese.
  • Spread a quarter of the spinach mixture on the wider end of each fillet. Roll the fillet around the mixture and secure with wooden toothpicks. Arrange the fish rolls in a baking dish with the seams facing downwards. Pour in water and cover loosely with foil.
  • Cook in the preheated oven for 15 to 20 minutes until the fish flakes easily with a fork and is completely opaque.
