Spinach Stuffed Mushrooms

Cheesy spinach-stuffed mushrooms with a trio of cheeses.
Ingredients:
  • 0.25 cup olive oil
  • 30 large whole fresh mushrooms, stems removed
  • 1 egg
  • salt and ground black pepper to taste
  • 1 teaspoon minced garlic
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup shredded Gouda cheese
  • 0.25 cup shredded mozzarella cheese
  • 0.25 cup dry bread crumbs
Instructions:
  • Preheat your oven to 375°F (190°C) for a perfect bake.
  • Lightly brush 30 muffin cups with olive oil. Then, generously coat the mushrooms with the remaining olive oil and place them gill-sides-up in the muffin cups.
  • Roast the mushrooms in the oven until perfectly tender, for around 12 minutes. Meanwhile, whisk together egg, salt, and garlic in a mixing bowl. Combine drained spinach, 1/4 cup Parmesan cheese, Gouda cheese, mozzarella cheese, and breadcrumbs until well mixed.
  • Take the mushrooms out of the oven, and discard any excess juice. Stuff the mushroom caps with the spinach mixture, and place them back in the muffin pan. Finish by topping the mushrooms with the remaining 1/4 cup of Parmesan cheese.
  • Place back in the oven until the stuffing is hot and golden brown, around 10 minutes.
