Moist and dense corn pone made by melting butter into boiling water for a unique twist on cornbread.
Ingredients:
  • 2 cups cornmeal
  • 0.5 cup white sugar
  • 3 cups water
  • 0.25 cup butter
  • 1.5 cups milk
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and generously butter a 9x13 inch baking pan.
  • Combine cornmeal, sugar, flour, and salt in a large bowl, stirring until well mixed.
  • In a saucepan, bring water to a gentle boil. Add butter and stir until melted and combined. Remove from heat and allow to cool until lukewarm, about 15 minutes. Mix in milk and eggs until well combined. Gently fold in the cornmeal mixture until just incorporated. Transfer into the prepared pan.
  • Bake in the preheated oven for 45 minutes until the top is dry. Allow to cool for another 45 minutes before cutting into squares.
