My easy peri peri chicken

Served with veg, slaw, and zesty peri peri sauce, this dish is sure to impress any crowd.
Ingredients:
  • 2 onions
  • 10 fresh mixed-colour chillies
  • 1 bulb of garlic
  • 2 tablespoons rose harissa
  • 1 heaped teaspoon smoked paprika
  • red wine vinegar
  • olive oil
  • 1 x 1.5 kg whole chicken the best quality you can afford
  • 1.2 kg potatoes
  • 4 sprigs of mint
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Quarter onions and add to a roasting tray with whole chillies, halved garlic bulb, harissa, paprika, sea salt, black pepper, red wine vinegar, and olive oil. Cut the chicken open flat and add to the tray, rubbing in the flavors. Roast for 1 hour. Scrub, wedge, and season potatoes with oil, then roast below the onions. After 30 minutes, baste the chicken and move the potatoes under the chicken. For the sauce, blend deseeded chillies, garlic, onions, pan juices, mint, red wine vinegar until smooth, adding water if needed. Serve the chicken with wedges, sauce, mint, and roasted garlic.
