My aunt's easy, moist potluck-perfect recipe. Great for parties or picnics.
Ingredients:
  • 1 egg
  • 1 cup raisins
  • 2.5 cups water
  • 0.5 cup butter
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon maple flavored extract
  • 1 cup confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you grease and flour a 10x15 inch jellyroll pan.
  • In a small saucepan, combine the raisins and water. Bring to a boil and simmer for 3 minutes. Drain the raisins, reserving the liquid. Allow to cool slightly before using.
  • In a large bowl, whisk together butter and sugar until smooth. Add the egg and vanilla, mixing until well combined. In a separate bowl, combine flour, baking soda, salt, and cinnamon. Gradually stir the dry ingredients into the wet ingredients along with the raisin water. Save 1/4 cup of the raisin liquid for the frosting. Fold in the raisins at the end. Spread the batter evenly in the prepared pan.
  • Place in the preheated oven for 20 minutes, or until the top turns a light golden brown. Meanwhile, combine the reserved raisin water, maple extract, and confectioners' sugar to create a delicate glaze. Drizzle over the hot cake and allow to cool before slicing into squares for serving.
