Harvest Pumpkin-Spice Bars

Indulge in these irresistible pumpkin bars with moist crumb, balanced pumpkin spice, and creamy homemade frosting, perfect for any fall gathering. A must-have recipe for the season!
Ingredients:
  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1 cup raisins, if desired
  • 1 package (3 oz) cream cheese, softened
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1/2 cup chopped walnuts, if desired
Instructions:
  • Preheat your oven to 350°F. Lightly grease a 15x10x1-inch pan with shortening. In a large bowl, whisk together eggs, granulated sugar, oil, and pumpkin until the mixture is smooth. Then add flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves. Mix in the raisins and spread the batter in the pan evenly.
  • Bake for 25 to 30 minutes until golden brown. Allow to cool fully in the pan on a rack for approximately 2 hours.
  • In a medium bowl, use an electric mixer to blend cream cheese, butter, and vanilla until smooth. Slowly mix in powdered sugar, one cup at a time, until the frosting is smooth and easy to spread. Frost the bars, sprinkle with walnuts, cut into 7 rows by 7 rows, and store in the refrigerator.
