Decadent pumpkin cupcakes topped with tangy orange cream cheese frosting!
Ingredients:
  • 4 eggs, slightly beaten
  • 0.75 cup Mazola® Vegetable Plus! Oil
  • 2 cups sugar
  • 1 (15 ounce) can pumpkin
  • 1.75 cups all-purpose flour
  • 0.25 cup Argo® OR Kingsford's® Corn Starch
  • 4 teaspoons Spice Islands® Pumpkin Pie Spice
  • 2 teaspoons Argo® Baking Powder
  • 0.75 teaspoon salt
  • 1 (8 ounce) package cream cheese, softened
  • 3 tablespoons butter OR margarine, softened
  • 1 tablespoon orange juice
  • 2 teaspoons Spice Islands® 100% Pure Bourbon Vanilla Extract
  • 1.5 teaspoons freshly grated orange peel
  • 4 cups powdered sugar
Instructions:
  • In a large mixing bowl, combine eggs, oil, sugar, and pumpkin. Set aside. In a separate bowl, mix dry ingredients together. Gradually incorporate the dry ingredients into the pumpkin mixture and beat until fully combined. Fill lined muffin tins about 2/3 full with the batter. Bake in a preheated 350-degree oven for 30 minutes or until the center springs back when touched. Allow the cupcakes to cool for 30 minutes before spreading with frosting.
  • For frosting: Cream together fluffy cream cheese and butter. Gently mix in remaining ingredients until smooth. Generously spread over cooled cupcakes.
