My epic BBQ sauce

Irresistibly delicious BBQ sauce recipe that packs a flavor explosion!
Ingredients:
  • 1 medium onion peeled and quartered
  • 10 cloves garlic peeled
  • 2 fresh red chillies stalks removed
  • olive oil
  • 10 sprigs fresh thyme or lemon thyme leaves picked
  • 10 sprigs fresh rosemary leaves picked
  • 1 small bunch fresh coriander
  • 10 bay leaves
  • 1 teaspoon cumin seeds
  • 2 tablespoons fennel seeds
  • 2 tablespoons smoked paprika
  • 6 cloves
  • 2 oranges zest and juice of
  • 200 g soft brown sugar
  • 6 tablespoons balsamic vinegar
  • 200 ml tomato ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons English mustard
  • 200 ml apple juice
Instructions:
  • Finely blend onion, garlic, and chillies in a food processor. Heat olive oil in a pan, then sauté the paste for 5 minutes. Blend herbs, spices, and orange zest in the food processor. Add the purée to the pan and cook for 1 minute. Stir in sugar until dissolved and paste thickens. Pour water, orange juice, and remaining ingredients into the pan. Boil, then simmer for 5-10 minutes until slightly thickened. Strain the sauce through a fine sieve twice for a silky texture. Cool, store in jars, and refrigerate for up to a week. To preserve longer, sterilize jars and lids, fill with sauce, and immerse in boiling water for 10 minutes. Cool, store in fridge or dark cupboard for up to 6 months.
