One-skillet creamy coconut lime chicken ready in 30 minutes for unforgettable weeknight dinners.
Ingredients:
  • 2 tablespoons refined coconut oil or olive oil, divided
  • 4 skinless, boneless chicken breasts (1 1/2 to 2 pounds)
  • 1 3/4 teaspoons kosher salt, divided, plus more to taste
  • 2 large shallots, peeled and sliced
  • 12 ounces fresh green beans, trimmed
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons grated or finely minced fresh ginger
  • 3/4 cup low-sodium chicken broth
  • 1 (13.5-ounce) can coconut cream, well shaken
  • 1 heaping teaspoon freshly grated lime zest (from about 2 limes)
  • 1 tablespoon fresh lime juice (from 1 to 2 limes), plus more to taste
  • Fresh cilantro, for garnish, optional
  • Lime wedges and toasted coconut, for serving, optional
  • Freshly steamed rice, for serving, optional
Instructions:
  • - Heat 1 1/2 tablespoons of oil in a large deep skillet over medium-high heat. Season chicken with 1 teaspoon of kosher salt on both sides. Add chicken to the skillet in a single layer and cook until golden brown and releases easily, about 4 to 6 minutes per side. Transfer chicken to a plate and cover with foil. Lower heat to medium; do not clean the pan.
  • Sauté shallots and salt in remaining oil until translucent, about 1-2 minutes. Add green beans and garlic, cook until fragrant. Stir in ginger and broth, scraping the bottom of the pan.
  • Pour in the coconut cream and mix well. Return the chicken to the pan, tucking it in with the green beans. Let it simmer gently, turning the chicken occasionally, until it reaches 165°F in the thickest parts, about 7 to 10 minutes. Stir the sauce occasionally while cooking.
  • To finish and serve: Turn off the heat. Mix in the lime zest and lime juice, adjusting flavor with additional juice or salt if desired. Garnish with fresh cilantro and optional coconut and lime wedges. Serve with rice. Refrigerate any leftovers in an airtight container for up to 4 days.
