My Grandmother's Best Berry Pie

Press sweet pastry dough into pan, fill with blueberries, top with crumbly dough, bake, serve with vanilla bean ice cream.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.375 cup butter
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.375 cup white sugar
  • 1 egg
  • 2.5 cups fresh blueberries
Instructions:
  • Combine flour and butter or margarine until well blended. Stir in baking powder, vanilla, sugar, and egg until thoroughly mixed. Allow the dough to rest for approximately 25 minutes.
  • Place the dough in the center of the pie dish and spread it evenly over the bottom and sides. Use a fork to make holes in the bottom of the dough. Allow the dough to rest for an additional 25 minutes before proceeding.
  • Arrange the berries in the pie dish and top with the remaining crumb dough.
  • Bake at 400°F (205°C) for 25-30 minutes until golden brown.
