Savory navy bean soup recipe with chicken stock, bacon, carrots, and onion - loved by all ages!
Ingredients:
  • 1 (16 ounce) package dried navy beans
  • water to cover
  • 7 cups chicken stock
  • 0.5 cup margarine
  • 4 carrots, chopped
  • 1 onion, chopped
  • 0.5 pound bacon
Instructions:
  • Rinse and organize beans. Soak them in a large bowl covered with water for 3 hours.
  • Simmer beans and chicken stock together in a large pot over medium heat.
  • In a large skillet over medium heat, melt the margarine until it's golden and bubbling. Add in the carrots and onion, sautéing them until the onion is caramelized, which should take about 10 minutes. Transfer this flavorful mixture to the pot.
  • In a skillet over medium-high heat, cook the bacon until crisp, about 10-15 minutes. Remove bacon from skillet, drain grease, and add the bacon to the pot. Simmer the soup over medium heat, stirring often, until the beans are tender and the soup thickens.
