Spicy mashed vegetable curry served with bread, a popular fast food from Maharashtra, India - Pav Bhaji.
Ingredients:
  • 2 cups water, plus more as needed
  • 3 medium potatoes
  • 1 medium carrot, halved
  • 1 cup green peas
  • 0.5 tablespoon ginger-garlic paste
  • 2 large green chile peppers, chopped
  • 2 teaspoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1 large green bell pepper, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon pav bhaji masala, or to taste
  • 0.5 teaspoon chili powder, or to taste
  • salt to taste
  • 1 tablespoon chopped fresh cilantro for garnish
Instructions:
  • Fill the bottom of a pressure cooker with 2 cups of water. Place a trivet inside, then turn the heat to high. Layer potatoes, carrots, and green peas in the pressure cooker, and lock the lid in place.
  • Cook over high heat until the pressure regulator reaches 15 psi for 5 to 10 minutes. Remove from heat and let the pressure drop naturally for 10 minutes. Unlock and remove the lid, then take out the vegetables and give them a good smash.
  • Combine ginger, garlic paste, and green chile peppers in a mortar and pestle, and grind until a smooth paste forms.
  • In a skillet over medium heat, heat oil and toast cumin seeds until fragrant, for about 1 minute. Stir in garlic-chili paste and saute for 1 to 2 minutes. Cook finely chopped onions until soft and lightly browned, for 3 to 5 minutes. Add green pepper, cover, and cook until tender, stirring occasionally, for about 5 minutes. Finally, mix in tomatoes and a splash of water.
  • Cook the mixture over gentle heat until it thickens, for 5 to 10 minutes. Add pav bhaji masala and a pinch of chili powder to taste.
  • Combine the tender boiled vegetables into the pot and let them simmer for about 10 minutes to develop rich flavors. Add salt to enhance the taste and garnish with fresh cilantro before serving.
