Cheesy sausage and corn chowder, a quick and comforting meal perfect for autumn. Kids approved and ready in under 30 minutes.
Ingredients:
  • 1 pound bulk pork sausage
  • 5 potatoes, peeled and cubed
  • 1 (15 ounce) can cream-style corn
  • 1 (15 ounce) can whole kernel corn
  • 0.5 onion, diced
  • 1 cup uncooked macaroni
  • 8 ounces processed cheese food, cubed
  • 1 pinch salt and pepper to taste
Instructions:
  • Break up the sausage into a Dutch oven or soup pot over medium-high heat, browning it evenly while stirring and breaking it into smaller chunks. Drain excess grease, then add the onion, and cook until beginning to soften.
  • Add the potatoes and enough water to cover them. Bring to a boil and stir in the macaroni. Add the cans of creamed corn and whole corn, including the juices from the cans.
  • Once the pasta and potatoes are tender, take off the heat and blend in the processed cheese until it's melted. Season with salt and pepper to your liking. If the chowder is too thick, mix in milk or water to reach desired consistency before serving.
