Nachos with corn salsa

Tantalize taste buds with this popular Mexican dish.
Ingredients:
  • 270g can corn kernels, drained
  • 2 tomatoes, chopped
  • 1/2 red capsicum, deseeded, chopped
  • 4 shallots, finely sliced
  • 230g pkt corn chips
  • 250ml tomato sauce
  • 160g cheddar cheese
  • 1 avocado, halved, peeled, mashed
  • 300ml sour cream
Instructions:
  • Mix the corn, tomato, capsicum, and shallots together and let the mixture sit aside.
  • Evenly distribute the corn chips into four ovenproof dishes. Drizzle sauce on top and sprinkle with cheddar cheese.
  • Preheat the grill to medium heat. Grill the corn chips until the cheese is melted, being cautious as they can burn easily.
  • To serve, generously layer on the vibrant corn salsa, creamy mashed avocado, and dollops of tangy sour cream.
