Nanna's apple and custard cake recipe

Indulgent custard, apple, and caramel unite in this nostalgic loaf, reminiscent of Grandma's baking.
Ingredients:
  • 125g butter, chopped, at room temperature
  • 215g (1 cup) caster sugar
  • 150g (1 cup) self-raising flour
  • 50g (1/3 cup) custard powder
  • 125ml (1/2 cup) milk
  • 4.40 gm vanilla extract
  • 400g can sliced apple pie fruit
  • Caramel sauce, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line a 10.5 x 20.5cm loaf pan, leaving the paper to overhang on the long sides.
  • Combine butter, sugar, flour, custard powder, milk, eggs, vanilla, and a pinch of salt in a bowl. Beat on low speed until just combined. Increase speed to medium and beat for 2-3 minutes until smooth.
  • Pour two-thirds of the batter into the pan, spread it out evenly. Layer the apple slices on top. Pour the remaining batter over the apples, smoothing the top. Bake for 1 hour until a skewer comes out clean. Let it sit for 5 minutes, then flip onto a wire rack to cool.
  • Enjoy the loaf warm or at room temperature, with a generous drizzle of caramel sauce.
