Transform Nanna's classic apple cinnamon custard cake into a delicious and simple treat using a pie maker, ideal for a delightful afternoon tea.
Ingredients:
  • Cinnamon sugar, to sprinkle
  • 150g (1 cup) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) thick vanilla custard
  • 80g butter, melted, cooled, plus extra, to brush
  • 2 red apples, quartered, core removed, thinly sliced
Instructions:
  • Combine the sifted flour and sugar in a mixing bowl, creating a well in the center. Whisk together the custard and eggs, then pour into the well along with the melted butter. Gently fold with a large metal spoon until just combined.
  • Prepare four 10cm squares of baking paper. Grease the pie maker holes. Pour 1/4 cup of the custard mixture into each hole. Place 4-5 apple slices on top, cover with baking paper squares. Close the pie maker and cook for 10 minutes until a skewer comes out clean.
  • Gently remove the cakes from the pan and place them on a wire rack. Repeat the process with the rest of the batter and apple to create 4 additional cakes.
  • Once the cakes are fresh out of the oven, generously brush each one with the additional melted butter and then sprinkle them with delectable cinnamon sugar. Serve them up and enjoy!
