Fluffy cinnamon doughnuts with warm apple slices and homemade custard, made in a Kmart pie maker. Perfect for a quick and delicious after-school treat or dessert.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 1/4 tsp ground allspice
  • 155g (3/4 cup) caster sugar
  • 185ml (3/4 cup) milk
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla extract
  • 90g butter, melted, cooled, plus 60g extra, melted
  • 180g (2/3 cup) canned apple pie slices
  • 1.25 gm ground cinnamon
  • 10.00 gm custard powder
  • 125ml (1/2 cup) milk
  • 20.00 gm caster sugar
Instructions:
  • To make the custard, combine custard powder with 3 teaspoons of milk in a small saucepan, stirring until smooth. Add sugar and the rest of the milk. Cook over medium-low heat, stirring for about 1 minute until it boils and thickens. Transfer to a bowl and let it cool slightly, stirring occasionally. Refrigerate for 15 minutes until set.
  • In a large bowl, combine sifted flour, allspice, and 55g (1/4 cup) caster sugar, then create a well in the center. In a separate large jug, whisk together milk, eggs, and vanilla, then pour into the dry ingredients along with melted butter. Gently stir until just combined.
  • Preheat pie maker. Spoon 1 tablespoon of batter into each hole. Top with 1 heaped teaspoon each of custard and apple. Cover with another tablespoon of batter. Close the lid and cook for 9 minutes until doughnuts are springy to the touch. Transfer to a wire rack and repeat with remaining ingredients.
  • Mix cinnamon and the remaining 100g (1/2 cup) caster sugar in a bowl. Brush the tops of doughnuts with extra melted butter, then sprinkle with the cinnamon-sugar mixture to coat. Serve warm.
