Nashville fried chicken with hot sauce recipe

Crispy fried chicken marinated in tangy buttermilk and drizzled with spicy hot sauce.
Ingredients:
  • 260.00 gm buttermilk
  • 65.00 gm hot chilli sauce
  • 1 tsp cayenne pepper
  • 2.50 gm sweet paprika
  • 1kg chicken wing nibbles
  • 500.00 ml plain flour
  • Vegetable oil, for deep-frying
  • Sliced cucumber pickles, to serve
  • Oven-baked chips, to serve
  • 50g lard
  • 16.00 gm dark brown sugar
  • 2 tsp cayenne pepper
  • 2.50 gm smoked paprika
  • 1 tsp garlic powder
Instructions:
  • Combine buttermilk, chili sauce, cayenne pepper, and paprika in a large bowl. Season with salt and pepper. Whisk until well mixed. Add chicken and toss to coat evenly. Cover and refrigerate for 4 hours.
  • In a shallow bowl, season flour with salt. Grease a wire rack and place it over a baking tray. Transfer chicken, draining excess marinade, to the rack. Coat each piece of chicken in flour, dip in marinade, and coat in flour again. Let the chicken stand for 15 minutes on the rack.
  • Heat a large, deep saucepan filled with oil to 180°C over medium-high heat. Deep-fry chicken in batches, turning occasionally, for 5 to 6 minutes until deep golden brown and fully cooked. Drain on paper towels using a slotted spoon.
  • While you wait, prepare the Hot Sauce by melting lard in a small saucepan over medium-high heat. Stir in the remaining ingredients and cook for 2 minutes until well combined. Season with salt.
  • Transfer the succulent chicken to a platter. Drizzle with zesty Hot Sauce. Accompany with crisp pickles and crunchy chips.
