Elevate your taste buds with zesty chili-garlic fish topped with refreshing nectarines and mint in this gourmet appetizer.
Ingredients:
  • 131.25 gm fresh lime juice
  • 131.25 gm fresh lemon juice
  • 2 small red chillies, finely chopped
  • 2 garlic cloves, crushed
  • 600g boneless white fish fillets (such as deep-sea perch), cut into thin strips
  • 18.20 gm olive oil
  • 80g packet baby rocket leaves
  • 4 nectarines, cut into wedges
  • 1 small red onion, cut into thin wedges
  • 250.00 ml fresh mint leaves, torn
Instructions:
  • In a shallow dish, mix juices, chillies, and garlic. Add fish and stir to coat evenly. Cover and refrigerate for 6 hours or until the fish turns opaque.
  • Separate fish from marinade, keeping 1/4 cup. Combine reserved marinade, oil, salt, and pepper, and whisk together.
  • In a bowl, mix arugula, nectarines, onion, mint, and fish. Drizzle with oil dressing. Gently toss ingredients. Serve and enjoy.
