Indulge in a decadent sweet nectarine tart using ripe juicy nectarines.
Ingredients:
  • 100g roasted peeled hazelnuts
  • 100g unsalted butter, softened
  • 110g (1/2 cup) caster sugar
  • 2 eggs
  • 35g (1/4 cup) plain flour, sifted
  • 3 yellow nectarines, halved, stoned, cut into thin wedges
  • 90g (1/4 cup) honey, warmed
  • Icing sugar, to dust
  • Creme fraiche, to serve
  • Raspberries, to serve
  • 185g (1 1/4 cups) plain flour
  • 1/2 tsp ground cardamom
  • 1.00 gm baking powder
  • 100g unsalted butter, roughly chopped
  • 55g (1/4 cup) caster sugar
  • 1 egg, lightly beaten
Instructions:
  • In a large bowl, blend flour, cardamom, and baking powder. Using your fingertips, mix in butter until it resembles fine breadcrumbs. Add sugar and egg, stirring until a dough forms. Shape into a loaf, cover with plastic wrap, and chill for 15 minutes.
  • In a food processor, finely grind hazelnuts. In an electric mixer, beat butter and sugar until pale and fluffy. Add eggs one at a time, beating well after each addition. Then, add flour and ground hazelnuts and beat for 1 minute until combined.
  • Preheat your oven to 180°C. Roll out the pastry on a lightly floured surface until 4mm thick. Line a 13cm x 35cm tart pan with removable base with the pastry, trimming the edges. Freeze for 15 minutes.
  • Prepare the tart shell by lining it with baking paper and filling it with dried beans or rice. Bake for 15 minutes. Remove the beans and paper, then bake for an additional 10 minutes until the pastry is dry and pale golden. Allow it to cool.
  • Smooth out the filling on the tart shell. Layer 30 nectarine slices in 5 rows widthwise, slightly overlapping. Bake on an oven tray for 40 minutes until the filling is golden and puffed. Let the tart cool in the pan, then transfer to a cutting board and brush the nectarines with warmed honey.
  • Sprinkle tart with powdered sugar and enjoy with fresh creme fraiche and juicy raspberries.
