Negroni-inspired cookie bars with gin, vermouth, and orange bitters for a sweet and salty twist.
Ingredients:
  • 2 cups finely crushed pretzels
  • 0.33333334326744 cup dark brown sugar
  • 0.25 cup dry milk powder
  • 12 tablespoons salted butter, melted
  • 3 cups white sugar
  • 6 large eggs, at room temperature
  • 1 cup all-purpose flour
  • 1 grapefruit, zested
  • 0.5 cup orange juice
  • 0.25 cup grapefruit juice
  • 0.25 cup bitter orange aperitif (such as Campari®)
  • 2 tablespoons gin
  • 2 tablespoons red vermouth
  • 1 cup freeze-dried strawberries
Instructions:
  • Heat your oven to a toasty 325 degrees F (165 degrees C, if you're keen on metric). Grease and line a 9x13-inch baking pan.
  • In a medium mixing bowl, mix crushed pretzels, brown sugar, and milk powder. Add butter to the bowl and mix well. Press the mixture into the bottom of the prepared pan.
  • Bake until golden, for 12 to 15 minutes in the preheated oven. Then, cool on a wire rack and raise the oven temperature to 350 degrees F (175 degrees C).
  • In a large bowl, combine sugar, eggs, flour, and grapefruit zest. Mix in the orange juice, grapefruit juice, orange aperitif, gin, and vermouth. Pour the mixture over the pretzel crust.
  • Bake in the preheated oven until the filling is set, around 30-35 minutes. If the filling starts browning too quickly, cover with foil. Allow it to cool completely on a wire rack for 20-30 minutes, then refrigerate until firm for about 1 hour.
  • Grind freeze-dried strawberries in a food processor until fine. Sprinkle strawberry powder over the filling using a fine-mesh strainer. Cut into 24 bars and enjoy.
