Easy-peasy chocolate candy cookies made with cookie mix.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 1 cup flaked coconut
  • Food color
  • 60 CADBURY Mini Eggs Candy or REESE'S PIECES Peanut Butter Pastel Eggs
Instructions:
  • Preheat oven to 375°F. Mix cookie mix, butter, and egg in a medium bowl until dough comes together.
  • Roll the dough into 24 balls each measuring 1 1/2 inches in size. Place the balls 2 inches apart on ungreased cookie sheets.
  • Bake until edges are lightly golden brown, for 8 to 10 minutes. Allow to cool for 1 minute, then transfer to a cooling rack. Let cool completely for about 15 minutes.
  • Enhance cookies with coconut. Place coconut in a 1-quart resealable bag. Add 2 to 3 drops of food color, then shake bag to mix well. If needed, add 1 to 2 teaspoons of water to ensure even color distribution, or more food color for desired hue.
  • Add a generous sprinkle of coconut on each cookie and place 3 candy eggs on top.
