Rich and creamy New England clam chowder with bacon, onions, potatoes, and clams - a comforting and easy-to-make soup.
Ingredients:
  • 4 slices bacon, diced
  • 1.5 cups chopped onion
  • 4 cups peeled and cubed potatoes
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper to taste
  • 3 cups half-and-half
  • 3 tablespoons butter
  • 2 (10 ounce) cans minced clams
Instructions:
  • Assemble all ingredients.
  • In a large stockpot over medium-high heat, cook diced bacon until almost crisp. Then, add onion and continue cooking and stirring until tender, about 5 minutes.
  • Combine the potatoes with water in the pot and season generously with salt and pepper. Bring to a boil, then lower the heat and simmer uncovered until the potatoes are tender, approximately 15 minutes.
  • Add the half-and-half and butter together to create a rich and creamy blend.
  • Separate clams from their juice, keeping the liquid. Add clams and half of the reserved juice to the soup. Heat gently until warmed, approximately 5 minutes, avoiding boiling.
