Creamy New England clam chowder for 2 with bacon, potatoes, and oyster crackers.
Ingredients:
  • 2 strips bacon strips, chopped
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 1 tablespoon all-purpose flour
  • 1 (14.5 ounce) can diced potatoes, drained
  • 1 (10.5 ounce) can clam juice
  • 1 cup whole milk
  • 1 (6.5 ounce) can chopped clams
  • 1 pinch Salt to taste
  • 1 pinch Ground white pepper to taste
  • 1 cup Oyster crackers
Instructions:
  • 1. Preheat a 3-quart saucepan over medium heat. Cook and stir bacon until crispy, about 5 minutes; transfer to paper towels to drain.
  • Saute the celery and onion in the flavorful drippings until softened, for about 5 minutes. Add the flour and cook for an additional minute.
  • Combine the potatoes, clam juice, milk, and clams (with their juice) in a pot. Bring to a boil, then simmer on low for 10 minutes to meld the flavors. Season with salt and white pepper to taste.
  • Serve the soup in bowls, top with crispy bacon, and accompany with oyster crackers.
