Try this light and flavorful clam chowder with cauliflower substituting potatoes and cream for a quick and healthy meal option in under an hour.
Ingredients:
  • 1 onion, sliced
  • 5 cups water
  • 2 cups chopped carrots
  • 1 (16 ounce) package frozen cauliflower florets
  • 4 teaspoons chicken bouillon granules
  • 2 (10 ounce) cans whole baby clams
  • 2 cups sliced fresh mushrooms
  • 1 pinch red pepper flakes
Instructions:
  • In a large pot, heat olive oil and cook onion until browned, around 10 minutes. Add carrots and 1 cup water. Bring to a boil, cover, and simmer until carrots are soft, around 10 minutes.
  • Blend cauliflower florets, chicken bouillon, garlic, and 4 cups of water until smooth in a blender. Pour the mixture over the onion and carrots in the pot.
  • Combine the baby clams and mushrooms in the pot, allowing them to simmer for approximately 10 minutes until heated through. Season with salt and pepper to taste.
