Malaysian cauliflower soup

A cozy vegetarian dish perfect for winter evenings.
Ingredients:
  • 1L Real Soup Base - Malaysian
  • 18.40 gm oil
  • 1 small onion, diced
  • 500g cauliflower, cut into small florets
  • 125.00 ml red lentils, rinsed
  • 20.00 ml fried shallots
  • 125.00 ml coriander leaves
Instructions:
  • In a medium saucepan, heat oil and sauté onion for 1-2 minutes until golden brown.
  • Combine the cauliflower, lentils, and Campbell’s Real Soup Base Malaysian in a pot and bring to a boil. Lower the heat, cover, and simmer for 15 minutes, or until the cauliflower and lentils are tender.
  • Puree the soup with a stick blender until smooth after removing from heat.
  • Divide soup among bowls and garnish with crispy shallots and fresh coriander.
