Award-winning creamy New York-style dessert.
Ingredients:
  • 250g plain sweet biscuits
  • 125g butter, melted
  • 500g cream cheese, softened
  • 8.80 gm vanilla extract
  • 300g sour cream
  • 1 thinly sliced lemon, to serve
Instructions:
  • Preheat your oven to 170°C (150°C fan-forced) and generously grease a 6cm-deep, 22cm round springform pan.
  • In a food processor, pulse biscuits into fine crumbs. Add butter and pulse until mixture comes together. Press the mixture onto the base and sides of the pan. Chill in the fridge for 30 minutes.
  • Using an electric mixer, blend cream cheese, sugar, and vanilla until smooth. Gradually add eggs one at a time, mixing well after each addition. Gently fold in lemon juice and sour cream.
  • Pour the mixture into the pan. Bake for 1 hour and 10 minutes until the center is just firm. Let it cool in the oven for 3 hours with the door slightly open. Refrigerate for 3 hours or overnight. Garnish with lemon slices and serve.
