Indulge in a rich, creamy New York-inspired dessert.
Ingredients:
  • 200g Nice biscuits
  • 75g unsalted butter, melted
  • 800g cream cheese
  • 190g caster sugar
  • 4 eggs
  • 3 egg yolks
  • 13.20 gm vanilla extract
  • 31.50 gm lemon juice
  • 300ml sour cream
  • Good-quality cocoa powder, to dust
Instructions:
  • Preheat the oven to 180°C. Grease a 23cm round springform pan and wrap the outside with 2 layers of aluminum foil to prevent water from seeping in during the water bath.
  • Pulse the biscuits in a food processor until crushed. Mix the melted butter with the biscuit crumbs and firmly press into the pan for the base.
  • Combine cream cheese, 170g caster sugar, eggs, egg yolks, 2 teaspoons vanilla extract, and lemon juice in a food processor until smooth. Pour over the biscuit base. Place the cheesecake in a roasting pan, add boiling water halfway up the sides of the springform pan, then bake for 1 hour.
  • Mix together sour cream, sugar, and vanilla until smooth, then drizzle over the cake. Bake for an additional 10 minutes. Allow the cake to cool in the pan, then chill in the refrigerator for 4 hours. Serve sprinkled with cocoa powder.
