Decadent Italian-style New York cheesecake, crustless and creamy with a luscious blend of cream cheese, ricotta, and sour cream. Chill time required for ultimate indulgence.
Ingredients:
  • 1 pound cream cheese, softened
  • 1 pound ricotta cheese
  • 1.5 cups white sugar
  • 4 eggs
  • 0.25 cup butter, melted and cooled
  • 3 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 2.5 teaspoons vanilla extract
  • 2 cups sour cream
  • 2 tablespoons lemon juice
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and adjust the oven rack to the middle position.
  • In a large mixing bowl, use an electric mixer to blend the cream cheese, ricotta cheese, and sugar until smooth. Mix in the eggs one at a time. Add the butter, flour, cornstarch, and vanilla extract, and blend well. Gently fold in the sour cream and lemon juice. Pour the batter into a 10-inch springform pan without greasing it.
  • Bake in the preheated oven for 1 hour. Allow the cheesecake to rest in the turned-off oven for an additional 2 hours. Cool completely, then gently loosen the edges with a spatula before unmolding. Serve chilled or at room temperature; store leftovers in the refrigerator.
