Try this delicious skillet pork cooked in Progresso® broth for a hearty dinner.
Ingredients:
  • 6 pork loin or rib chops, about 1 inch thick (about 2 lb)
  • 1 cup dry Marsala wine or Progresso™ beef flavored broth (from 32-oz carton)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 2 tablespoons olive or vegetable oil
  • 1/2 cup chopped red onion
  • 2 cloves garlic, finely chopped
  • 1 cup Kalamata olives, pitted
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • Place the pork in a shallow glass or plastic dish. Combine wine, vinegar, lemon juice, and honey in a small bowl, then pour over the pork. Ensure both sides of the pork are coated. Cover and refrigerate for at least 8 hours, but no more than 24 hours, remembering to turn it occasionally.
  • In a 12-inch skillet, heat oil over medium-high heat. Sauté the rest of the ingredients in the oil for about 5 minutes, stirring often, until the onion is soft.
  • **Enhance the flavor of the pork by transferring it from the marinade to a skillet. Cook for approximately 10 minutes, flipping once, until the pork is beautifully browned. Pour in the reserved marinade. Bring it to a boil, then lower the heat. Cover and simmer for about 20 minutes, or until the pork is fully cooked.
