Sweet and spicy brown sugar rub enhances tender grilled pork baby back ribs, basted in savory steak marinade.
Ingredients:
  • 4 pounds pork baby back ribs
  • 3 tablespoons Dijon mustard, divided
  • 0.33333334326744 cup firmly packed brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 0.5 teaspoon ground cumin
  • 0.5 cup steak marinade (such as A.1.® Marinades New York Steakhouse)
Instructions:
  • Preheat the grill to medium heat and lightly oil the grates. Prepare two 30-inch long sheets of aluminum foil on a work surface.
  • Cut the pork ribs in half, then place each half on separate sheets of aluminum foil. Cover both sides of the ribs with mustard. Combine brown sugar, paprika, garlic powder, onion powder, black pepper, and cumin in a bowl and mix well. Rub the spice mixture generously on both sides of the ribs.
  • Create a double-thick top layer by folding the excess aluminum sheet. Pinch and fold the top and sides together to fully enclose the ribs in foil while allowing heat to circulate.
  • Place the ribs on the preheated grill, close the lid, and cook for about 45 minutes until tender and fully cooked. Use a meat thermometer to ensure the ribs reach at least 160 degrees F (70 degrees C). Remove ribs from foil before serving.
  • Brush the ribs with the steak marinade and return them to the grill. Grill for an additional 15 minutes, flipping occasionally and basting with marinade, until the ribs develop charred grill marks and the marinade cooks onto the ribs.
