Indulgent no-bake cookies with cocoa, peanut butter, oats, sugar, and a hint of butter and milk. Elevate with a luscious peanut butter drizzle. Perfect pick-me-up treat!
Ingredients:
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 3 cups rolled oats (gluten-free, if needed)
  • For the peanut butter drizzle (optional):
  • 3 tablespoons creamy peanut butter
  • 2 teaspoons coconut oil
Instructions:
  • Prepare a baking sheet by lining it with parchment paper and set aside.
  • Prepare the cookie base: In a saucepan over medium heat, melt together sugar, butter, milk, and cocoa powder until smooth. Bring to a boil and cook for 1 minute. Transfer to a mixing bowl, then add peanut butter, vanilla, salt, and rolled oats. Mix well.
  • Shape the cookies: Use a medium cookie scoop or a well-rounded tablespoon to place cookie dough on a lined parchment baking sheet. You can keep them in the scoop shape or gently roll and flatten between your palms to shape them.
  • Prepare the optional peanut butter drizzle by combining melted peanut butter and coconut oil in the microwave for 30 seconds. Stir well and drizzle over the cookies using a spoon. Omit this step if you intend to pack the cookies for on-the-go consumption, as the drizzle may soften at room temperature, potentially causing a mess.
  • Chill for 20 minutes to firm up the cookies and set the drizzle. Store in an airtight container. Enjoy within a week at room temperature or a month if refrigerated. For cookies with peanut butter drizzle, keep refrigerated to maintain firmness.
