Indulgent chocolate cake without butter from 'ouch' on Taste.
Ingredients:
  • 215.00 gm caster sugar
  • 2.20 gm vanilla essence
  • 65.00 gm Cocoa
  • 82.50 ml plain flour
  • 150.00 gm Self-raising flour
  • 60ml milk
  • 160ml olive oil
  • Cocoa powder, extra, for dusting
Instructions:
  • Heat oven to 180C/160C fan-forced, then prepare a 19cm square cake pan by greasing and lining its base and sides.
  • With an electric mixer, whisk eggs and sugar in a small bowl until they become pale and creamy. Mix in vanilla, then transfer the mixture to a large bowl.
  • Carefully sift cocoa and flour over the velvety egg mixture, then gently fold until almost mixed. Incorporate the milk and oil until fully combined. Transfer the luscious batter into the prepared pan and smoothen the top.
  • Bake for 35-40 minutes or until a skewer comes out clean when inserted into the center. Let it rest in the pan for 5 minutes, then transfer to a wire rack to cool. Sprinkle with extra cocoa powder before serving.
