No-Bake Chocolate Oat Bars

Quick and easy no-bake oatmeal bars with a delicious chocolate peanut butter layer, just refrigerate to set!
Ingredients:
  • 1 cup butter
  • 0.5 cup packed brown sugar
  • 3 cups quick cooking oats
  • 1 cup semisweet chocolate chips
  • 0.5 cup peanut butter
Instructions:
  • Prepare a 9-inch square pan by coating it with a layer of grease.
  • In a large saucepan over medium heat, melt butter. Add brown sugar and vanilla, then stir in oats. Cook over low heat until well blended, for about 2 to 3 minutes.
  • Press half of the mixture into the bottom of the pan; save the rest for the topping.
  • Melt chocolate chips and peanut butter together in a small heavy saucepan over gentle heat, stirring often until silky. Pour the chocolate blend over the crust in the pan and spread evenly using a knife or the back of a spoon.
  • Sprinkle the rest of the oat mixture over the chocolate layer, pressing lightly. Chill in the refrigerator for 2 to 3 hours or overnight. Allow it to come to room temperature before cutting into bars.
