Get a protein-packed boost with these easy, no-bake protein bites. Just blend ingredients, chill in ice-cube trays, and freeze for a month. Delicious mix of protein powder, nuts, cream cheese, and Greek yogurt for a flavorful snack on the go. Freeze for a cool and convenient energy hit anytime.
Ingredients:
  • 60g (⅓ cup) natural almonds, plus extra, chopped, to serve
  • 45g (⅓ cup) pecans, plus extra, chopped, to serve
  • 16.80 gm melted coconut oil
  • 60ml (¼ cup) honey, plus extra, to drizzle
  • 250g pkt Cream Cheese, at room temperature, chopped
  • 180g (⅔ cup) Greek-style yoghurt
  • 8.80 gm vanilla extract
  • 35g pkt Perform Vanilla Flavour Whey Protein powder
  • 60g (½ cup) frozen raspberries, thawed
  • 6.00 gm gelatine powder
Instructions:
  • Prepare two 6-hole giant silicone ice cube trays by lining 12 holes with wide strips of baking paper, making sure to leave some paper hanging over the sides of each cube and folding it outward slightly.
  • In a small food processor, pulse almonds and pecans until finely chopped. Add oil and 1 tbsp honey, then pulse until mixture comes together. Spoon 2 teaspoonfuls of mixture into each prepared hole and flatten with the back of a spoon. Chill in the fridge for 15 minutes before serving.
  • Clean the food processor. Combine cream cheese, yogurt, vanilla, and remaining honey in the food processor; blend until smooth. Add protein powder and blend until incorporated. Gently mix in raspberries until combined.
  • In a small microwave-safe bowl, combine 1 tbsp water with gelatin and stir until dissolved. Microwave for 20 seconds until hot. Whisk with a fork until gelatin dissolves. Gradually pour the mixture into a running food processor and process until smooth.(Optional: transfer the cheesecake mixture to a jug if needed).
  • Evenly pour the cheesecake mixture into the ice cube trays. Tap the trays on the counter to level the mixture. Chill in the fridge for 4 hours or overnight to set.
  • Gently lift the cheesecakes using the paper and place them on a serving plate. Finish by drizzling extra honey and sprinkling with more chopped nuts before serving. Be sure to check out our video for a visual guide on making our No-bake protein cheesecake cubes.
