Indulge in a heavenly no-bake white chocolate cheesecake with a tropical twist of coconut.
Ingredients:
  • 250g packet nice biscuits
  • 125g butter, melted
  • 6 gelatine leaves (see notes)
  • 2 x 180g blocks white chocolate, chopped
  • 600ml tub thickened cream (see notes)
  • 180g dark chocolate, chopped
  • 750g cream cheese, softened
  • 2 x 50g sachets coconut milk powder
Instructions:
  • Prepare your 22cm round springform pan by greasing it and lining both the base and sides with two layers of baking paper, ensuring the paper extends 2cm above the edge of the pan.
  • Pulse biscuits in a food processor until finely chopped. Add butter and pulse until well combined. Press mixture firmly over the base of the pan and refrigerate until ready to use.
  • Soak gelatine leaves in a small bowl of cold water until softened, about 5 to 7 minutes.
  • Place the white chocolate in a microwave-safe bowl and microwave it on HIGH, stirring every 30 seconds with a metal spoon, until smooth (1-2 minutes). Slowly mix in half of the cream until well combined. Then, melt the dark chocolate in a separate microwave-safe bowl on HIGH until smooth (about 1 minute).
  • Drain excess liquid from gelatine and gently heat in a small saucepan. Stir continuously for 30 seconds or until fully melted. Remove from heat.
  • With an electric mixer, whip the cream cheese until it's fluffy. Blend in the coconut milk powder. Pour in the hot gelatin and mix until incorporated. Add the white chocolate mixture and mix thoroughly, scraping the sides of the bowl. Incorporate the remaining cream until smooth. Transfer the mixture into the prepared pan and even out the top.
  • Efficiently pour dark chocolate over cheesecake and swirl with a butter knife for a marbled look. Chill in the fridge overnight until set.
  • Gently transfer the cheesecake from the pan to a serving plate. Allow it to rest for 10 minutes before serving.
