Impress with a quick and decadent strawberry cheesecake trifle to end your Christmas feast in style! Ready in 30 minutes, no cooking required.
Ingredients:
  • 500g pkt frozen strawberries, thawed
  • 55g icing sugar mixture
  • 600ml thickened cream
  • 700g strawberry-flavoured yoghurt
  • 220g spreadable cream cheese
  • 125ml liqueur
  • 500g savoiardi (sponge finger biscuits)
  • 500g strawberries, thinly sliced
  • Strawberries, extra, halved, to serve
Instructions:
  • Puree thawed strawberries and half of the icing sugar in a blender until velvety.
  • In a large bowl, use an electric mixer to whisk the cream, yogurt, cream cheese, and remaining icing sugar until soft peaks form.
  • Pour the liqueur or orange juice into a shallow bowl. Dip each biscuit into the liquid, making sure to thoroughly coat it. Cut each biscuit in half horizontally. Repeat the process with the rest of the biscuits and the remaining liqueur or orange juice.
  • Layer half of the biscuit halves with the cut side facing out at the bottom of a 10-cup (2.5L) glass serving dish. Add half of the sliced strawberries on top of the biscuits. Follow by spreading half of the cream mixture and half of the strawberry puree. Repeat the layers with the remaining ingredients - biscuit halves, sliced strawberries, and cream mixture.
  • Sprinkle with additional strawberries and drizzle the trifle with the rest of the strawberry puree.
