Impress loved ones with a delicious strawberry meringue cheesecake, perfect for any celebration!
Ingredients:
  • 200g sweet biscuits (such as Arnott's Nice)
  • 100g Flora with Butter, melted
  • 15.00 gm powdered gelatine
  • 62.50 gm boiling water
  • 750g cream cheese, at room temperature
  • 215.00 gm caster sugar
  • 300ml brand thickened cream, whipped
  • 247.50 gm strawberry jam
  • 4 small meringues, roughly chopped
  • 252.50 gm Brand thickened cream, whipped
  • 250g strawberries, hulled and halved lengthways
  • 1 passionfruit, halved, pulp and seeds reserved
Instructions:
  • Prepare a 23cm spring-form pan by greasing and lining its base with baking paper. Break biscuits into large pieces and pulse in a food processor until finely chopped. Add butter and pulse until mixture is well combined. Press the biscuit mixture firmly into the base of the pan. Refrigerate for 30 minutes.
  • In a heatproof bowl, pour boiling water over the gelatine and stir until completely dissolved. Allow it to cool to room temperature before using.
  • In an electric mixer, blend cream cheese, sugar, and vanilla until creamy. Add the cooled gelatin mixture and mix well. Gently fold in the cream and swirl in the strawberry jam. Pour the filling over the prepared base and ensure the top is smooth. Cover and refrigerate overnight.
  • Presentation: Gently move the cheesecake to a serving plate. Arrange meringue pieces, strawberries, and passionfruit on top. Slice and serve to enjoy.
