Meringues with strawberry and passionfruit

"Easy yet elegant meringue dessert, great for hosting dinner parties!"
Ingredients:
  • 2 eggwhites, at room temperature
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • 250.00 ml light and creamy vanilla yoghurt
  • 8 large strawberries, hulled, sliced
  • 2 large passionfruit, pulp removed
Instructions:
  • Preheat your oven to 150°C. Draw eight 8cm rounds on a sheet of baking paper using a pencil. Place the sheet, pencil-side down, on a large baking tray.
  • With an electric mixer, whip egg whites until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until meringue is glossy and sugar is fully dissolved. Gently fold in vanilla.
  • Spoon meringue onto baking paper forming 8 x 1cm-thick discs. Bake for 40 minutes, then let cool in the oven with the door slightly open until crisp, about 1 hour.
  • On each serving plate, delicately position a meringue, add a dollop of 1 tablespoon of creamy yogurt, layer with half of the fresh strawberries, gently press on another meringue, spread the remaining yogurt, top with the rest of the strawberries, and finish with a luscious drizzle of passionfruit. Ready to impress your guests with this elegant dessert!
