Strawberry-Chocolate Meringues

Indulgent chocolate meringues with strawberry frozen yogurt and sauce - a showstopper dessert for any occasion.
Ingredients:
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup sugar
  • 1 ounce unsweetened baking chocolate, coarsely grated
  • 2 cups sliced strawberries
  • 1 quart strawberry fat-free frozen yogurt
Instructions:
  • Preheat oven to 275°F and line a cookie sheet with heavy brown paper or aluminum foil.
  • Using an electric mixer on high speed, beat egg whites and cream of tartar in a medium bowl until foamy. Gradually add sugar, beating constantly until stiff and glossy. Be sure not to underbeat. Gently fold in the chocolate.
  • Place 1/3 cupfuls of meringue onto a cookie sheet, shaping them into approximately 3-inch circles with raised sides. Bake for 1 hour, then turn off the oven and keep the meringues inside with the door closed for an additional 1 1/2 hours. Allow the meringues to finish cooling at room temperature.
  • Blend strawberries in a blender or food processor until smooth. Fill each meringue with approximately 1/2 cup frozen yogurt, then top with the blended strawberries.
