Berry chocolate meringues

Indulge in a decadent treat of dark chocolate, meringue, and ripe berries - a luscious and irresistible dessert.
Ingredients:
  • 3 eggwhites, at room temperature
  • 215.00 gm caster sugar
  • 20.00 gm cocoa powder
  • 50g dark chocolate, finely grated
  • 250g punnet strawberries, hulled, quartered
  • 150g punnet blueberries
  • 20.00 gm caster sugar, extra
  • 252.50 gm thickened cream
  • 2.20 gm vanilla extract
  • Grated dark chocolate, extra, to serve
Instructions:
  • Preheat your oven to 130°C. Line 2 baking trays with baking paper and draw 3 circles, each 10cm in diameter, on each piece. Place the paper on the trays, pencil-side down.
  • With an electric mixer, whip egg whites in a large bowl until soft peaks form. Gradually add sugar, one tablespoon at a time, while beating well after each addition. Keep beating until the meringue is thick and shiny. Sprinkle cocoa powder over the meringue and incorporate grated chocolate using a large metal spoon, gently folding until well combined.
  • Take the meringue mixture and spoon it onto baking trays following the guide of circles. Create a small indentation in the middle of each meringue. Bake on the lowest oven shelf for 1 hour. After baking, turn off the oven and allow the meringues to cool inside with the door slightly open for 1 hour. Finally, transfer the meringues to a wire rack to cool completely.
  • In a bowl, mix berries with a touch of extra sugar, stirring well. Let sit for 15 minutes. Whip cream and vanilla until soft peaks form. Arrange meringues on plates, then top with cream and berries. Finish with a sprinkle of extra chocolate. Serve and enjoy!
