Indulgent Eton Mess Christmas Crack: A festive treat combining berry meringues, freeze-dried raspberries, salty crackers, caramel, and dark chocolate for a perfect balance of flavors - a must-have holiday snack.
Ingredients:
  • 6 Arnott’s Salada Original crackers
  • 160g (1 cup, lightly packed) brown sugar
  • 125g butter, chopped
  • 1 Raspberry & Belgian White Chocolate Meringue
  • 2 x 180g pkt dark cooking chocolate, melted
  • 40.00 ml chopped pistachio kernels
Instructions:
  • Preheat your oven to 180C/160C fan forced. Line a 20 x 30cm slice pan with baking paper, leaving some paper to hang over the sides. Place the crackers in a single layer on the bottom of the pan, cutting them to size if needed.
  • In a small saucepan over medium heat, combine sugar and butter. Stir until butter is melted and mixture is smooth. Bring to a boil and cook, stirring, for 30 seconds until thickened.
  • Evenly pour the sugar mixture over the crackers and ensure the surface is smooth. Bake until the sugar mixture is bubbling, which should take about 5 minutes. Allow it to cool slightly before serving.
  • Crush the meringue using a meat mallet, rolling pin, or the palm of your hand.
  • Drizzle the rich dark chocolate over the sweet sugar mixture, then delicately spread it out with a palette knife. Sprinkle on the crushed meringue and pistachios. Allow it to rest for 2 hours until firm. Cut into pieces before serving.
