Make a quick and tasty British classic in just 10 minutes with this recipe.
Ingredients:
  • 250g fresh blueberries or frozen blueberries
  • 21.00 gm lemon juice
  • 20.00 gm caster sugar
  • 12.00 gm icing sugar
  • 1/2 tsp vanilla bean paste
  • 50g meringue nests
Instructions:
  • In a small saucepan over low heat, combine blueberries, lemon juice, sugar, and 2 tbsp water. Cook for 5 minutes until sugar dissolves and blueberries break down. Let cool completely.
  • Whip the cream, icing sugar, and vanilla bean paste with an electric mixer until soft peaks form, about 2 minutes. Gently fold in crumbled meringue.
  • Layer the cream mixture and blueberry mixture in serving glasses, alternating until all ingredients are used, ending with a layer of cream mixture on top. Serve right away for a delicious treat.
