Festive holiday slice with a delicious twist, ideal for sharing with loved ones or enjoying as a festive dessert.
Ingredients:
  • 750.00 ml rice bubbles
  • 170.00 gm desiccated coconut
  • 127.50 gm sultanas
  • 150g pkt red glace cherries, halved
  • 250.00 ml macadamias, toasted, chopped
  • 395g can sweetened condensed milk
  • 100g copha, chopped
  • 290g pkt white chocolate melts
  • Mini marshmallows, to decorate
  • Coconut flakes, to decorate
  • Fresh strawberries, hulled, sliced, to decorate
  • Fresh raspberries, to decorate
Instructions:
  • Prepare a 20cm x 30cm slice pan by greasing and lining it with baking paper, ensuring the paper extends 3cm over the long sides of the pan.
  • Mix together rice bubbles, desiccated coconut, sultanas, cherries, and the majority of the nuts in a bowl.
  • In a small saucepan over low heat, combine condensed milk, copha, and 100g of the melts. Stir constantly for 2 to 3 minutes until smooth. Pour mixture over rice bubbles and stir well. Press into pan evenly and refrigerate overnight.
  • Take the slice out of the refrigerator 1 hour before decorating as per the note. Put the rest of the melts in a heatproof, microwave-safe bowl. Microwave them uncovered on MEDIUM (50%) for 1 minute, stirring halfway through with a metal spoon until they are melted and smooth.
  • - Spread a generous amount of rich, velvety chocolate over a quarter of the slice. Move swiftly to adorn the slice with fluffy marshmallows, tropical coconut, vibrant strawberries, juicy raspberries, and the rest of the crunchy nuts. Continue working in small sections until the entire slice is beautifully decorated. Chill in the fridge for 15 minutes or until perfectly firm. Cut into delectable pieces and enjoy!
