Try making the classic British dessert, Eton Mess. It's an easy, delicious treat loved by many.
Ingredients:
  • 225g fresh raspberries or frozen raspberries
  • 53.75 gm caster sugar
  • 450g strawberries, hulled, quartered
  • 150ml thick cream
  • 150ml thick Greek yoghurt
  • 4 (10g each) meringue nests, crumbled
Instructions:
  • In a saucepan, gently simmer raspberries and sugar over low heat for 5 minutes until the juices begin to release. Allow the mixture to cool before proceeding.
  • Blend in a food processor until velvety, then strain to remove solids. Combine strawberries with the puree, cream, yogurt, and meringue in a bowl.
  • Gently mix all ingredients until blended, then transfer the mixture into four glasses and serve promptly.
