Eton mess: quick and irresistible dessert.
Ingredients:
  • 400g fresh strawberries, washed, with the green bits cut off
  • 37.50 gm icing sugar, sifted, if you can be bothered, plus 1/2 tbsp icing sugar extra
  • 300ml thickened cream
  • 1 tsp vanilla bean paste
  • 6 bought meringue nests, lightly crushed
Instructions:
  • Use your favorite knife and cutting board to slice the strawberries. Place 3/4 of them in a medium mixing bowl, add icing sugar, toss gently, and let sit for 10 minutes.
  • Measure cream in Pyrex Measuring Jug. Combine cream, icing sugar, and vanilla in a large Pyrex Mixing Bowl. Whisk vigorously with Pyrex Balloon Whisk until fluffy. Gently fold in crushed meringues and strawberries until mixed.
  • Add the remaining strawberries to the mixture and enjoy your delicious creation!
