Meringue celebration cake with chocolate chunks and berries

Indulgent berry, chocolate, and meringue cake - perfect for celebrations!
Ingredients:
  • 375mls (1/2 cups) thickened cream
  • 150g dark chocolate, roughly chopped
  • 250g (1 punnet) small ripe strawberries, hulled
  • 200g (1 punnet) blueberries
  • 5 large egg whites
  • 275g (1/4 cups) caster sugar
  • 2.20 gm vanilla essence
Instructions:
  • Preheat the oven to 100°C and prepare two pieces of non-stick baking paper to line two baking trays, ensuring they are large enough to fit.
  • Trace a 23cm diameter circle onto each piece using a pencil. Place the baking paper on the trays with the pencil markings facing downward.
  • Using electric beaters, whip the egg whites until soft peaks form. Slowly add the sugar, one spoonful at a time, making sure to whisk thoroughly after each addition.
  • Fold in the vanilla with the final portion of sugar until the mixture is thick, glossy, and soft peaks form when lifting the beaters. Spread the meringue mixture onto the lined baking trays, shaping them into discs using the circles as a template.
  • Allow the meringue to bake in a preheated oven for 2 1/2-3 hours until it turns crisp and dry. (This extended time at a low temperature is crucial to achieve the desired crisp texture without browning.)
  • Take out of the oven and let them cool on the trays. Keep them in an airtight container for up to 2 days.
  • Whisk the cream until it forms firm peaks. Place one meringue disc on a serving plate or cake stand, spread with half of the cream, sprinkle on half of the chopped chocolate, then top with the remaining meringue disc.
  • Spread the remaining cream over the top, garnish with strawberries and blueberries, and sprinkle with the remaining chocolate. Serve within 3 hours of assembling.
