"Easy-to-make 4th of July layer cake with sturdy Swiss meringue frosting, perfect for warm weather celebrations!"
Ingredients:
  • 2 pounds mixed berries (strawberries, raspberries, and blueberries)
  • 3 baked and cooled layers of Vanilla Buttermilk Cake
  • 1 recipe for Swiss meringue frosting (about 4 cups)
Instructions:
  • Prepare the berries by washing and drying them. Remove the stems from the strawberries. Slice most berries for layering in the cake and cut a few into halves or quarters for decorating the top.
  • Assemble the cake: Start with a layer of vanilla buttermilk cake on a cake plate. Spread a third of the Swiss meringue on top with an offset spatula. Sprinkle 1 cup of berries and sliced strawberries over the meringue. Add the second cake layer and repeat the process until you place the final cake layer. Finish by spreading the remaining Swiss meringue and arranging the rest of the berries and strawberries.
  • To serve the cake, accompany it with any extra berries. Enjoy the cake on the day it is made for the best taste.
