Celebrate Memorial Day with a delicious homemade berry trifle featuring layers of white cake, custard, and whipped cream.
Ingredients:
  • 2 eggs
  • 1.5 cups white sugar
  • 0.33333334326744 cup butter, softened
  • 2.25 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 eggs, beaten
  • 2 cups whipping cream
  • 0.5 cup white sugar
  • 4 cups sliced strawberries
  • 4 cups blueberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x9-inch glass baking pan.
  • 1. Whisk eggs until pale and fluffy, for about 3 minutes. Incorporate sugar and butter. Sift flour, baking powder, and salt together. Gradually add to the egg mixture, alternating with milk, and briefly mix after each addition. Transfer batter to the pan.
  • Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the cake comes out clean. Allow the cake to cool completely before serving.
  • While waiting, prepare the custard by whisking together sugar, flour, and salt in a saucepan over gentle heat. Incorporate milk and eggs, then simmer while stirring occasionally until the custard thickens, approximately 25 minutes. Take off the heat and mix in butter and vanilla essence. Transfer the custard to a glass container and chill in the fridge until needed.
  • Whip cream and sugar together until stiff peaks form. Chill in the refrigerator.
  • Slice the cake into 2- or 3-inch squares, then arrange a layer of cake at the base of a trifle dish. Pour in custard to cover the cake, followed by a layer of strawberries and blueberries. Spread some whipped cream over the berries. Add another layer of cake and continue layering until the top layer is either custard or whipped cream. Decoratively place the remaining berries on top.
  • Wrap the trifle with plastic wrap and refrigerate until serving, for at least 30 minutes.
