Red, White and Blue Fruit "Cake"

Impress loved ones with a fruit layer "cake" instead of traditional cake!
Ingredients:
  • 1 package (8 oz) fat-free cream cheese, softened
  • 1 container (6 oz) Greek Fat Free honey-vanilla or plain yogurt
  • 1/3 cup sugar
  • 3 (8-inch) round slices seedless watermelon, rind removed (each 1 inch thick)
  • 3 cups blue and red berries (choose from blueberries, blackberries, raspberries, strawberries)
Instructions:
  • Combine cream cheese, yogurt, and sugar in a medium bowl. Use an electric mixer on medium speed to beat them together until smooth, about 30 seconds.
  • As you're ready to serve, assemble your dessert by placing a watermelon round on a serving platter. Add one-third of the cream cheese mixture on top. Layer half of the berries over the cream cheese. Carefully place the second watermelon round over the berries. Repeat the layers of cream cheese mixture, berries (reserving a few for decoration), and watermelon round. Finish off by spreading the remaining cream cheese mixture over the top and garnishing with the reserved berries.
